About Clyde, The Food Truck

The mission of Sweet Prairie Food Truck is to bring unique comfort food to the prairies of North Dakota while supporting local ranchers and businesses. To read more about how Clyde came to be, read below.

 

 
 

The idea of starting a food truck had always been a thought. It was an annoying thought that I would push back and ignore. But, after ten years of operating my catering business, I realized I needed to adapt my business or sell out. Adapting meant opening a food truck, brick-and-mortar, or working for another chef. I chose to start a food truck.

I searched for months before finding Clyde (summer of 2019). He was a lonely, dirty, empty white truck when I saw him. There was an American flag stapled to the rear door. Maybe that was a sign, saying this is your American dream. With a generous gift from my parents, I purchased the white truck.

While driving home, I couldn't stop smiling, even when everyone kept passing me. The truck only went 55 MPH! I was excited to create something unique and finally have a kitchen on wheels.

The white truck got his name because every good vehicle needs a nickname; gotta show them some love. The title explained that this truck was a "Workhorse," so I named him Clyde, after the Clydesdale or after a redneck! However, you want to look at that.

At the end of the summer of 2020, I enlisted my Dad's help converting Clyde into a food truck. It was an "Extreme Food Truck Makeover" in Dad's shop; we had two weeks to convert Clyde into a food truck. We made some great memories in those two weeks.

The entire family helped: siblings, parents, nieces, and nephews (my husband was farming! so he got a free pass!).

After Clyde was finished, we hit the road and started to learn very quickly that operating a food truck was not easy, nor did my level of expertise prepare me for how busy Clyde would get. Running a food truck was a learning curve. Clyde quickly gained "Groupies," to this day, I still laugh when I say, "That's a Groupie!".

Clyde and I are beyond blessed by the support and customer loyalty we have had in our new business venture. I will continue to be thankful for every customer who comes to Clyde's window to place an order. Clyde is my happy place, and I hope we can bring some happiness to our customers' faces, too.
